What’s For Dinner Wednesday: Try My Spaghetti with Roasted Tomatoes

What You Need

1 box of Angel Hair spaghetti
3 cups cherry tomatoes – halved or quartered
2 cloves of garlic – minced
2 tablespoons extra-virgin olive oil
2 teaspoons balsamic vinegar
1/4 teaspoon crushed red pepper
1/2 teaspoon kosher salt
cracked black pepper for garnish
1/2 cup parmesan cheese-shaved

~Preheat oven to 450°

Now, let’s make something Pretty and Delicious! Start with the pasta. Cook the pasta by following the directions on package.

Place the tomatoes in a large bowl and toss in olive oil, crushed red pepper, garlic, balsamic vinegar and salt. Then spread tomatoes in a single layer into a oven safe pan.

Roast tomatoes for about 10 minutes or until tomatoes are soft and slightly charred. Once tomatoes and pasta are done, toss together and season more, if desired. Plate this dish family-style, then top with shaved parmesan cheese and cracked black pepper. Enjoy!
