What You Need
2 cups black beans – if canned, rinse and drain
2 cups corn kernels -frozen (defrosted) or fresh
1 cup tomatoes – diced
1/2 cup spring onions – chopped
1 1/2 teaspoons ground cumin
2 tablespoons olive oil
Salt and pepper
Fresh Cilantro for garnish
Now, let’s make something Pretty and Delicious™. In a large bowl combine all ingredients and mix until all of your ingredients get friendly. Garnish with cilantro as desired and serve. This dish is perfect to make ahead of time or right before serving. Now, all you have to do is Enjoy!
