What’s For Dinner: Try Chef Huda’s Homemade Tomato and Basil Sauce

One Box of Gemelli Pasta or Your pasta of choice

1/4 cup Extra Virgin Olive Oil
4 cups of Cherry Tomatoes
1 Onion – Diced
2 Cloves Garlic-Minced
1 cup of White Wine
1 Tablespoon of Vanilla Extract
1 Tablespoon of dry Oregano
1 Tablespoon of dry Thyme
1/2 cup of Fresh Basil Leaves (6 to 12 Leaves during on the size)
4 Leaves of Fresh Basil Leaves for Garnish-Roughly chopped
Salt, Sugar, Garlic Salt and Pepper-Season to taste
2 cups of Water (Add more, if needed)
Parmesan Cheese-for Garnish

~Pre-heat your oven for 450 F or on Broil

Now, let’s make something Pretty and Delicious

Clean and dry your tomatoes then place them into a oven safe pan or baking sheet covered with aluminum foil.

Lightly drizzle olive oil on the tomatoes and sprinkle with salt and pepper before placing in the oven.

Place the tomatoes in the oven for 3-7 minutes or until they start the char or split.

~Chef Huda’s Note: The tomatoes will start to shrink and will start to brown and split when they are roasted. Please watch your tomatoes! They will burn.

Meanwhile, in a large saucepan add in oil and sauté the onions and garlic over medium heat.

Remove the Tomatoes from the oven, when they are done and add the roasted tomatoes to the pan with the onions and garlic mixture.

Stir in the remaining ingredients (except your pasta) and season lightly.  Cover and simmer for 30 minutes.

While your sauce is simmering, this is a great time to cook your pasta. Follow the directions on the pasta’s package for the best results.

After 30 minutes when your sauce is done you can leave it chunky or use a immersion blender* or blender to make it smooth, it is up to you.

~Chef Huda Tip: When blending hot liquids Be Careful! Use a small towel to protect hands while using blender or immersion blender*

Taste one more time to insure tomato sauce bliss.  Serve the pasta as you see fit. Garnish with parmesan cheese and fresh basil. Enjoy!
