What’s For Dinner Wednesday: Try My Creamy Asparagus Soup

My Creamy Asparagus soup is the perfect way to eat deliciously Vegan!
What You Need
1 pound fresh Asparagus-cut into 1 1/2 inch pieces
4 cloves garlic–minced
3 tablespoons of Extra Virgin Olive Oil
1/2 cups of water
1/2 teaspoon Kosher salt
1/4 teaspoon fresh cracked black pepper
Let’s make something Pretty and Delicious! Let’s start our Asparagus. In a large saucepan, over medium heat add in Extra Virgin Olive oil and garlic, cook until garlic starts to brown. Add in the Asparagus and water and then cover. Cook until the Asparagus is tender. Once the asparagus mixture is done. Pour into Blender and puree until a light and smooth consistency. Taste and add in more salt or pepper, if needed.
~Chef Huda Note: When blending hot items or liquids, please be careful not to burn yourself. Partially covering the blender top with a dry kitchen towel usually helps with any spillage.
Ladle your Creamy Asparagus Soup into a bowl. To finish drizzle a little Extra Virgin Olive Oil and some Cracked Black pepper before serving. Now all you have to do is Enjoy!
