What’s For Dinner Wednesdays: Red Bliss Potato and Onion Au Gratin

Whether fried, baked, boiled, mashed or roasted, we love our potatoes. These starchy, high in potassium, tubular wonders have been a part of numerous comfort dishes throughout the world for centuries. Whether you love them lumpy or double baked, this versatile vegetable has accompanied many of my favorite food memories. This gorgeous Red Bliss Potato and Onion Au Gratin is a deliciously creamy dish that showcase the simply elegancy of America’s favorite spud.

What You Need

2 pounds red bliss potatoes-thinly sliced
1 cup sliced onion -thinly sliced
1 cup low-fat white cheddar cheese-shredded 2 cups half-and-half
2 tablespoons unsalted butter-room temperature
1/8 teaspoon cayenne pepper
Pinch of nutmeg
1 1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper

~Preheat oven to 400 F degrees

Now, let’s make something Pretty and Delicious™

  1. Grease the 2 quart baking dish with butter. Thinly slice the onions and potatoes about a 1/4 inch in thickness. Start by layering the potatoes then onion in the baking dish, continue until complete.
  2. In medium bowl combine the half and half, cayenne pepper, nutmeg, salt, and pepper in a bowl. Taste the mixture, it should be well seasoned. Add more salt and pepper, if needed.
  3. Pour the creamy mixture into the baking dish and over the potatoes.
  4. Cover the baking dish with aluminum foil and bake for 20 to 30 minutes. Remove the foil and sprinkle cheese on top and bake for an additional 15 to 20 minutes until potatoes are tender and cheese is golden brown. Once, done let rest for 5-10 minutes before serving. Enjoy!
