Weekend Eats: Egg Frittata with Roasted Red Peppers and Spinach
This weekend let’s wow them, with this simple and delicious Egg Frittata with Roasted Red Peppers and Spinach. Brunch never looked so good.
What You Need
8 eggs-organic preferred
1/2 cup roasted red peppers-store brought (12oz)-thin slices
1 cup spinach-rough chopped
1/4 of cup of mozzarella cheese-shredded
1/2 cup of low fat milk
1 tablespoons Extra Virgin Olive Oil
1 teaspoon Kosher salt
1/2 teaspoon of freshly cracked black pepper
~Pre-heat your oven to 350 degrees~
Let’s start our Frittata. Place a medium non-stick skillet on medium heat.
Add in oil, roasted red peppers, spinach, salt and black pepper.
Whisk together eggs and milk then add to pan. Sprinkle mozzarella cheese on top and place in oven.
Let cook for around 10 minutes until golden brown.
Now, let’s make something Pretty and Delicious! Once your Frittata is done, plate it. Now, all you have to do is Enjoy!
